Observation: Observed personal drink on counter in main kitchen area in a single use cup with no lid or straw. CA: Personal drinks must be stored in a single use cup with a lid and straw. COS: The PIC discarded the personal drink.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observation: Observed handwashing sink with no paper towels. CA: Handwash sinks must be supplied and accessible for employee use at all times. COS: The PIC restocked the handwashing sink with paper towels.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observation: Observed spray bottle of chlorine sanitizer at >200 ppm chlorine. CA: Chlorine sanitizers must be maintained within 50-100 ppm. COS: PIC remade the sanitizer bottle. Sanitizer verified at 100 ppm chlorine.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Observation: Observed multiple containers of protein drink mix held past the manufacturer's expiration date printed on the containers. CA: Foods must be discarded after that printed manufacturer's expiration date. COS: The PIC discarded all expired containers of protein drink mix.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observation: Observed scoops stored with the handle below the food line in multiple protein drink mix containers. CA: Scoops must be stored with the handle stored above the top of the food line. COS: The PIC removed the scoops from the containers.
