Observed TCS food held above 41 degrees F on make table and in walk in cooler. CA: Discussed cold holding and make table cooler with pic. PIC was encouraged to take temperatures with thermometer during inspection to verify temperatures of food. Discussed ice in pans and in top of cooler. Walk in cooler food prepped in am over 4 hours prior to inspection as labeled on pan was discussed. COS: PIC discarded food held above 41 degrees F in coolers. Cooler to be serviced and documentation provided to health dept. during re-check of cooler. No food can be held in cooler until re-checked. PIC will monitor cooling and prep procedures of employees. COS:

Observed food build up on knife, black build up on soda dispenser, and food build up on slicer. CA: Discussed cleaning frequency of food contact surfaces with pic. COS: pic will clean food contact surfaces and health dept. will re-check.

Observed no thermometers in walk in cooler or reach in coolers. CA: Discussed ambient air thermometers for all cold hold units placed in conspicuous, warmest area of cooler for monitoring temperatures of coolers with pic and area manager. COS: manager is ordering thermometers for coolers. Health dept. will re-check.

Observed back door handle broken and door in need of repair and facility with flies. CA: Discussed back door repairs with pic and prevention of flies. COS: PIC will have door repaired and ensure that back door is working properly for proper sealing. Flies will be re-checked by health dept.
