Pasta 1- 49 degrees, Pasta 2- 45 degrees, Meat Sauce- 46 degrees, Sliced Ham- 45 degrees, Sliced Cheese- 45 degrees, and Made In House Ranch- 45 degrees. Corrective Action: CFSM was notified. All out of temperature TCS food items in cooler were found to be greater than 4 hours old and were discarded. Employees were instructed not to use walk-in cooler for TCS foods until it has been properly serviced by a licensed professional and re-checked by the Health Dept to ensure it is operating at 41 degrees or below.
