Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed several dirty dishes in the clean dishes storage area. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch COS: CFSM moved dishes to 3 compartment sink to be cleaned.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(8)(b) - hot water and chemical-methods(p)
Observed an employee sanitizing food contact surfaces with solution from a sanitizer bucket with 0 ppm concentration of quaternary ammonia sanitizer. CA: A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC), have a concentration as specified in DPH Rule 511-6-1-.07(6)(g) and as indicated by the manufacturer’s use directions included in the labeling. COS: CFSM remade sanitizer buckets with appropriate concentrations (verified by inspector).
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Observed improperly labeled working bottle of chemical disinfectant. CA: Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. COS: CFSM relabeled working bottle with appropriate label.
