observed raw shell eggs and waffle mix with raw egg stored above ready to eat food in walk in cooler. CA: Raw animal food must be stored according to the final cook temp of the food and never above ready to eat food. COS: pic moved eggs to lower shelf.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food held above 41 degrees F on counter (white sauce, red sauce-77 degrees F) and TCS food inside cooler drawers below grill (fish at 66 degrees F, sliced gyro at 51 degrees F). CA: TCS food must be held at 41 degrees F or below. COS: PIC discarded sauces held over 4 hours, and fish not rapidly cooled down. Gyro meat was cooled down in walk in cooler. 6/12/26 Food is in walk in cooler that is reading 35 degrees F in last walk-in cooler. First Walk in cooler compressor is being replaced and electrical panels are being serviced by certified electrician and documentation provided 6/14/26
