Observed two personal drinks stored on shelf above prep table and one personal drink without lid and straw stored on top shelf in walk-in cooler. CA: Personal drinks must be stored in a single service cup with lid and straw and placed only in designated areas separate from food preparation and food storage areas. COS: PIC had personal drinks relocated to designate employee area.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed soiled, dry wiping cloth stored on shelf above prep table. CA: Dry wiping cloths shall be free of food debris and visible soil. COS: Soiled, dry wiping cloth was removed from shelf above prep table and placed in dirty linen.

Observed most current inspection report not displayed in public view. CA: The most current inspection report shall be prominently displayed in public view at all times COS: No COS observed. PIC must display most current inspection report in public view.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed whisk used for mixing pizza dough stored in container of water not continuously running and not maintained at a temperature of at least 135°F. CA: During pauses in food preparation, utensils used for food preparation must be stored on a clean portion of the food preparation table or cooking equipment, or if utensil is stored in water, water must be continuously running or water temperature must be maintained at 135°F or above. COS: PIC removed whisk from water and placed it in 3 compartment sink to be washed and sanitized.
