4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed vegetable chopper with heavy dried food debris stored on clean dish rack. CFSM stated chopper was from previous night. CA: Food contact surfaces must be cleaned and sanitized before and after each use, or at least every 4 hours. COS: Vegetable chopper was taken to dishwashing area to be properly washed, rinsed, and sanitized.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed sanitizer cloth buckets not at proper strength. All 3 cloth buckets measured at 0ppm quat ammonia. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH regulations. COS: All sanitizer buckets were changed out and adjusted to 300 ppm quat ammonia.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed hand wash sink faucet in back kitchen area loose and falling down when in use. Observed hand sink in front kitchen area bent and damaged. CA: Plumbing and fixtures must be maintained in good repair. COS: No COS observed. Work order will be submitted to have both sinks repaired or replaced. This will be rechecked.
