Observed deli meat and cheese held past 7 days CA: Food must be discarded in 7 days including the date of preparation/cooking of first ingredient or unsealed deli meat and soft cheese. COS: pic discarded deli meat and cheese.

Observed walk in freezer door not closing properly and pic has difficult time with door opening and closing. CA: Equipment/walk in freezer or walk in freezer door should be maintained in good repair. COS: Walk in freezer and walk in freezer door/heating element around door to be serviced and replaced if needed Health Department will follow up with Walk in freezer door.

observed walk in cooler lighting inadequate for reading labels and dates. CA: Discussed lighting intensity with pic. COS: pic will have lighting intensity increased in walk in cooler.

Observed five dented cans of black olives on storage rack for use. Corrective Action: Discussed importance of inspecting canned food items upon receipt for dents with CFSM. Discussed designating a shelf in the dry storage area to store dented cans to return or discard. PIC removed the dented cans and placed them on a designated can to be returned to supplier.

Observed build-up of ice from frozen condensation on boxed food items in walk-in freezer. CA: Discussed with PIC. Boxed food items were found to be sealed in plastic and were not directly contaminated. All boxed food items were relocated away from condensation leak. Licensed professional will service freezer and correct issue. This will be rechecked.
