Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed brown debris on interior side walls and lid of ice bin. CA: Discussed with PIC: food-contact surfaces must be clean to sight and touch. COS: No COS observed. Ice bin must be cleaned and sanitized. Health dept. will return to recheck.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(l) - mechanical warewashing, hot water sanitization temperatures(p)
Observed high temperature dish machine not reaching 165F during sanitizing cycle (first sanitizing cycle=155F; second cycle sanitizing cycle=162F). CA: Discussed with PIC: temperature of hot water sanitizing rinse may not be less than 165°F. COS: No COS observed. High temperature dish machine may not be used until professionally serviced and approval is given by health dept. Three compartment sink must be used to wash and sanitize dishes until dish machine is rechecked by health dept.

Observed employee handling food without hair restraint. CA: Discussed with PIC: Employees preparing or handling food shall use effective hair restraints. COS: Employees preparing or handling food put on hair restraint.
