CA: Food items under time control shall be marked with the time the food is removed from cold holding. COS: Since sliced tomatoes=47°F and sliced cheese=50°F were found to be on make table for less than 4 hours. Food items were put it ice baths and placed in walk-in cooler to rapidly cool.
