6-1D - time as a public health control: procedures and records

Observed TCS food items with 10am-2pm time label. Upon further evaluation, TCS food items were found to be placed on make table at 12pm but time label was not updated. CA: Food items under time control shall be marked with the time the food is removed from cold holding. COS: Since sliced tomatoes=47°F and sliced cheese=50°F were found to be on make table for less than 4 hours. Food items were put it ice baths and placed in walk-in cooler to rapidly cool.

Observed no written time control procedure for TCS food items being held under time control on make table. CA: If time control is used written procedures shall be prepared in advance, maintained in the food service establishment, and made available to the health dept upon request. COS: No correction on site can be noted. Facility must create written time control procedure. This will be rechecked by health dept.

Observed no key drop delivery agreement at facility and last delivery log without temperatures recorded by delivery driver or food facility. CA: Employees must verify that foods delivered to the food service establishment during non-operating hours are from approved sources, are placed into appropriate storage locations, and are maintained at the required temperatures. This must be recorded in verifiable manner for health department to access by request. COS: No correction on site observed. Facility must acquire key drop delivery agreement and record temperature observations in a verifiable manner. This will be rechecked by health dept.
