Corrective Action: Discussed hot holding temperatures for TCS foods with the PIC. Per the PIC, the Macaroni & Cheese had been reheated less than 2 hours prior and placed into the steam well. The PIC reheated the Macaroni & Cheese (182 F) and added water to the steam well.

Observed TCS foods cold held above 41 degrees in walk in cooler. Gumbo- 43, Lettuce-44, Green bean with ham-44, Rice-45, Tilapia-43, Shredded cheese-43, Coleslaw-44, Salmon-43, white fish-43. Discussed with PIC; establishment was prepping from walk in cooler and had truck delivery during prep. Establishment had air condition off during this time. CA: Established timetable of events including prep time and truck delivery times and determined which TCS foods were prepped from freezer less than 4 hours prior. All TCS foods older than 4 hours were discarded by PIC. Discussed importance of maintaining proper cold hold temperatures and exposure during prep and deliveries. Temperatures were rechecked after cooling within the 4-hour period and had cooled to 41 degrees or lower after rechecks.
