Inspector observed utensils stacked wet. Corrective Action: Shall be air-dried or used after adequate draining before contact with food. COS PIC staggered utensils to air dry.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Inspector observed chipped spatulas. Corrective Action: Utensils shall be maintained in a state of repair. COS PIC discarded the spatulas in disrepair.
