Inspector observed PIC stating that he uses his vehicle to obtain eggs from Sam's club. COS-discarded. Corrective Action: Food shall be obtained from sources that comply with law.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Inspector observed sanibucket at 0 ppm Cl. COS-replaced with sanitizer solution at 50-100 ppm Cl. Advised PIC to ensure that sanitizer solution is at the correct level.

Inspector observed visible gaps at the top and bottom of the exterior rear screen door. COS-Closed outer door. Corrective Action: outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors.
