Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Dish machine not dispensing adequate sanitizer; test strip at plate level showed 0 ppm Chlorine. COS - PIC changed sanitizer bottle and primed line; test strip at plate level showed 50 ppm Chlorine. Corrective action: Chemical sanitizing dish machine must dispense sanitizer in the approved ranges.

Inspector observed mold-like growth inside bulk ice machine. Corrective action: Ice machines shall be cleaned at a frequency to preclude the accumulations of mold and soil.
