Bar dish machine sanitization solution insufficient at approximately 10 ppm. Advised PIC to have machine serviced and to use main kitchen dish machine and 3-comp sink to wash, rinse, and sanitize until machine is correctly sanitizing.

Inspector observed thawing chicken that is not completely submerged under water. Corrective Action: time/temperature control for safety food shall be thawed under refrigeration that maintains the food temperature at 41°F (5°C) or less; PF or completely submerged under running water.

Inspector observed test strips being used that expired in 2019. Corrective Action: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.

Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit; see temp log. COS - PIC discarded TCS foods from salad cooler. Advised PIC to cold hold at 41 degrees F or below and have coolers serviced.

Observed a strainer inside the bar hand sink. Advised PIC that hand wash sink may not be used for any other purpose than hand washing. COS - PIC removed the strainer basket.
