6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Inspector observed refrigerated foods beyond 7 days that were not discarded. Inspector observed foods date marked beyond 7 days. COS-discarded. Corrective Action: A food that requires datemarking shall be discarded if it:
(i) Exceeds 7 days, not including the time that the product is frozen;
(ii) Is in a container or package that does not bear a date or day; or
(iii) Is inappropriately marked with a date or day that exceeds 7 days.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Inspector observed light gaps at all exterior back doors. Corrective Action: Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Inspector observed dipping cup used to scoop cheese from prep top cooler.
Corrective Action: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container;
On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized at a frequency specified under DPH Rule 511-6-1-.05(7)(b) and (8)(a);
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Inspector observed surfaces of dish machine, shelves, and other equipment with accumulation of food-like residue. Corrective Action: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
