Observed black residue and build up on the interior of the ice machine in the main kitchen. CA advised PIC that the ice machine must be thoroughly cleaned and to implement frequent routine cleaning / maintenance.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed several reach in coolers and freezers in the main kitchen without external thermometers to monitor ambient temperatures. CA advised PIC that each reach in cooler and freezer must have a visible and accessible thermometers.
