15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(b),(c) - manual warewashing, sink compartment requirement; drainboards (pf, c)
Observed three-compartment sink without labels to indicate which is the wash, rinse, and sanitize compartment. CA PIC was instructed to label the three compartments sink in order to be able to easily identify which is the wash, rinse and sanitize so that proper sanitization procedures are ensured.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed grease build up on the floor of the main kitchen. CA advised PIC to clean the floor and develop a routine cleaning schedule to keep the floors free of debris and grease.
