Observed clean dishes stored wet stacked in ware washing area in back of main kitchen. CA: Advised PIC to stack dishes in a way that allows the air to dry them.

Observed prep-top cooler in main kitchen area without a cover. Observed containers of shredded cheese uncovered in prep area. COS: PIC covered all food items. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination;

Observed Hot water sanitizing dishwasher not being able to reach proper temperature at manifold. (final rinse - 156F). CA: Advised PIC to utilize 3 compartment sink with appropriate sanitizer until dishwasher is serviced and is able to reach a final rinse of at least 180F.
