6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed cut, leafy greens in front service area out of temperature, PIC informed that they were being held as TPHC. Date marking stickers noted discard time as EOD.
CA: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.
COS: PIC and staff re-labeled TPHC cut leafy greens discard time as 2pm based on stated prep work start time of 10am.
