Observed a pan of liquid egg stored uncovered in a reach in cooler. 511-6-1-.04(6)(e)2.(ii), Storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. PIC was advised that all stored food must be covered in order to prevent possible contamination. PIC covered food.

Observed the failure to date mark food prepped on site (chicken wings in WIC, coleslaw, and repackaged tartar sauce in RIC in the kitchen and held over 24 hours in the FSE. All TCS foods prepped onsite shall bear a date mark to indicate the date by which food shall be consumed, sold or discarded. Instructed PIC proper date marking. PIC date marked foods.

Observed chicken, mix vegetable, and shrimp in prep top cooler being held above 41F (Chicken 46 f, shrimp 47 f, and mix vegetable 45 f). Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. Informed PIC to put the fish and shrimp in a ice bath or move into a walk in cooler. PIC moved food items.

Observed kitchen floor tiles need filling. All physical facilities shall be maintained in good repair. PIC advised to get it done within 30 days.

Observed no adequate lighting in walk-in cooler. The light intensity shall be at a surface where food is provided for consumer self-service such as buffets and salad bars or where fresh produce or packaged foods are sold or offered for consumption inside equipment such as reach-in and under-counter refrigerators, at a distance of 30 inches (75 cm) above the floor in areas used for handwashing, warewashing, and equipment and utensil storage, and in toilet rooms. PIC shall install another light in walk-in cooler.
