Glynn EH observed staff using stirring utensils from a container labeled for Quat chemical sanitizer solution immediately without allowing the utensils to air dry for 30 sec before use. Glynn EH observed that the chemical was indeed Quat solution. COS: Glynn EH instructed management and staff that they are not allowed to use utensils immediately after sanitization for food/drink prep without allowing for the utensil to air dry. CA: Management and Glynn EH worked on a process where the facility will store the stirring utensils in clean and fresh sanitizer underneath the counter and move them to a clean cup after sanitizing so that they can adequately air dry before going into customers food/drinks.

It was observed on 02/07/2024 that the staff had been properly trained with systems in place to prevent sanitizer contamination of rte drinks

Observed during the course of this inspection that the facility walk in freezer was malfunctioning and creating an extreme amount of ice buildup inside of the unit. This cause multiple boxes of exposed food product to have the freezer created ice coming into direct contact with it.

COS: All boxes of food with external freezer ice inside of the food product were discarded.

CA: Glynn EH instructed management to wrap any food product that could be potentially exposed to the external ice with an extra barrier of protection until repairs can be made to the unit.

Management stated that they will rearrange the cooler so potentially exposable products will not be stored in the areas with the worst ice buildup.

On 02/07/2024 it was observed that no repairs had been made and there was 2 boxes of foods with ice inside of them. Cos: Management discarded the contaminated boxes of food. CA: Glynn EH instructed management to begin either wrapping all potentially exposable boxes of food with plastic wrap before storage in the freezer or to fully encase the packages in bags to create another protective barrier to prevent the contact with freezer ice.

On 02/13/2024 it was observed that the facility had identified that an aftermarket repair made by the previous owner was responsible for the excessive ice buildup & production. Management indicated that they were working to find the correct parts for the walk in freezer to repair the unit and it was observed that all foods being stored frozen were being properly protected.

CA: Management stated that the facility would only use the approved multi quat sanitizer for cleaning food contact surfaces moving forward.
