Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed during the course of this inspection that the facility was sanitizing dishes at the 3 compartment sink with chlorine sanitizer at a concentration below 50ppm. COS: Concentration was raised to 50ppm. CA: Glynn EH instructs management to ensure that all dishes are sanitized with a chlorine-water solution with a concentration in a range of 50-100ppm.
