Observed during the time of this inspection that the microwave in the main kitchen area has old food buildup on the inside ceiling food contact surface. COS: Management cleaned the area during the inspection. CA: Management stated that they will re train staff to observe and clean area as needed to prevent contamination.

Observed build up on the internal ice dispensing areas at the time of this inspection. COS:PIC placed ice machine out of use to be rinsed, washed, and sanitized. CA: Increase cleaning frequency to prevent build up.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple sauce, dairy, and liquid egg containers opened without a 7 day date mark at the time of this inspection. COS: PIC discarded food products not dated with unknown opened dates. CA: Ensure facility is dating marking all TCS food products that have been opened and held for over 24 hours
16C - sewage and waste water properly disposed

Observed facility plumbing from dish machine causing wastewater to back into the kitchen drains at the time of this inspection. COS: PIC placed kitchen out of order and will not operate it until backing up is repaired and another inspection takes place.

Observed walk in cooler with severe build up on the storage racks at the time of this inspection. CA: Increase cleaning frequency.
