6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed during the course of this inspection that the facility had a reach in cooler holding TCS foods above 41 deg f. COS: Out of temp TCS foods were discarded. CA: Glynn EH instructs management to monitor internal temps of TCS foods in cold holding and when foods are found out of temp they are discarded. Glynn EH instructs management to ensure that units are not overstocked with product in a way that restricts the cold air flow inside of a unit.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed during the course of this inspection that the facility mechanical dishwasher was not dispensing sanitizer. COS: Machine was removed from use. CA: Glynn EH instructs management to have the unit serviced and sanitizer supply restored. Facility is to use 3 comp sink until unit is serviced.
