Observed garlic in oil in kitchen area with Time as a Public Health Control (TPHC) documentation for 11 AM - 3 PM not discarded at 3:10 PM. Must use or discard TCS foods utilizing TPHC within the 4 hours. COS by discarding.

Observed sushi rolls stored at sushi station under time as a public health control, not updating labels to reflect times new rolls are put on the line. CA: Accurate time labels must be placed on items using time as a public health control. COS: Sushi rolls labeled to reflect accurate time.
6-2 - proper date marking and disposition

Observed container of cooked tofu skins with date marking of 4/25 and inspection performed on 6/2. PIC stated old date label was not removed. CA: A food that requires datemarking shall be discarded if it exceeds 7 days or is inappropriately marked with a date or day that exceeds 7 days. COS: Tofu skins were discarded.

Observed container of cooked carrots in reach-in cooler without date marking and cooked yesterday. CA: TCS food items kept over 24 hours must be date marked. COS: Food items were discarded.

Observed crab meat mix prepared on 5/20 in walk in cooler. Must use or discard TCS food within 7 days, day of prep counting as day 1. COS by discarding.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(u) - food display (p)
Observed food at self serve buffet line not properly protected from contamination. Container of wontons, wasabi, ginger not stored covered or under sneeze shield. CA: Food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards, display cases, or other effective means. COS: No contamination was observed, food items were covered.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed multiple clean food containers stacked while wet. Must stack clean dishes & utensils in a way that facilitates proper air drying. COS by separating dishes to air dry.
