Observed raw beef and raw chorizo stored on shelf directly over raw shrimp and raw fish. CA: Foods must be stored by minimum cook temperature. COS: No contamination was observed. Raw beef and chorizo were moved to bottom shelf not be stored over raw shrimp and fish.
4-2A - food stored covered

Observed cheese sticks, chicken nuggets and toast in reach-in freezer uncovered. Food items previously mentioned were not actively cooling. CA: Foods must be covered except when cooling. COS: No contamination was observed. Food items were covered.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Observed clear spray bottles used to store chemicals without a common name label. CA: Working containers used for storing toxic materials shall be clearly identified with the common name of the material. COS: PIC labeled the spray bottles with chemical common names.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observed sanitizer bucket in main kitchen with chlorine sanitizer above manufacturers recommendations, greater than 200 PPM. CA: Chemical sanitizers shall be used according to manufacturers recommendations. COS: Sanitizer bucket was refilled, 100 PPM chlorine.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet sanitizer towel stored on cutting board and by grill. CA: Wet sanitizer towels shall be stored in sanitizer solution in between uses. COS: Sanitizer towels were taken to dirty linen container.
