Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed boiled eggs in walk-in cooler with prep/open date of 12/24 and inspection performed on 1/5. CA: Refrigerated, ready-to-eat, TCS food prepared and held for more than 24 hours shall be clearly marked for a maximum of 7 days. COS: Boiled eggs were discarded.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Observed multiple yogurts in reach-in cooler with manufacturers use by date of 12/24. CA: TCS foods that are labeled as “keep refrigerated” and are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: Yogurts were discarded.
12C - wiping cloths: properly used and stored

Observed sanitizer bucket with solution below manufacturers recommendations. CA: Chemical sanitizer solution shall be at a concentration specified under manufacturers recommendations. COS: Sanitizer bucket was refilled (300 PPM Quaternary ammonium).
