6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed TCS food reading below 135F in the dispenser (nacho cheese=115F). CA: Hot TCS food shall be maintained at 135F or above. COS: Cheese bag was placed in cheese dispenser prior to today, unsure of date. COS: Cheese bag was discarded. Work order placed to have cheese dispenser replaced or repaired.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed no CFSM at facility. CA: Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) to ensure food safety is being managed within the food service establishment during all hours of operation. No COS can be observed, inspector must return for follow-up to verify. PIC stated she is registered to take class end of May 2026.
