6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed can of whip cream left on prep top table without cold holding (Whip cream 55). Whip cream had been sitting out less than an hour prior. CA: All cold TCS food shall cold hold at 41F or below. COS: CFSM had whipped cream relocated to walk in cooler for rapid cooling and will utilize ice bath for cold holding at milkshake station.
8-2B - toxic substances properly identified, stored, used

Observed chemical spray bottle stored next to container of red sauce under prep top area. CA: Toxic materials shall be stored separate from food, equipment, and utensils. COS: Chemical spray bottle was relocated to chemical storage.
