Observed multiple containers of food without label of common name. CA: Food containers shall be labeled with common name of food. COS: CFSM labeled food containers.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed container of chips stored directly on floor in main kitchen. CA: All food shall be stored at least 6 inches from the floor. COS: CFSM used pallet to keep container of chips at least 6 inches from floor.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed an in-use wet wiping cloth stored on table not in sanitizer bucket. CA: COS: In-use sanitizer cloths shalle bestored in sanitizer in between uses. CFSM placed in use cloth in sanitizer bucket for storage.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed multiple salsa bowls with chipping around edges. CA: All food contact surfaces shall be in good repair and proper adjustment. COS: Not noted as COS. CFSM will have new bowls ordered for use. Health department will recheck.
