Observed improper cold holding of TCS foods above 41F at self-service buffet (Ranch 45, Ranch 46, balsamic dressing 47, thousand island dressing 46).
CA: Cold TCS foods shall be maintained at 41F or below.
COS: CFSM removed TCS foods to be rapidly cooled in walk in cooler top 41F or below. TCS foods were prepped 2 hours prior. CFSM will have containers placed in freezer prior to prepping to help TCS foods on bar maintain proper cold hold temperatures.

Observed TCS foods hot held below 135F in steam well in main kitchen (tomato basil 68, Potato soup 71, cheese soup 70). Soups had been prepped 1 hour prior.
CA: Hot TCS food shall be maintained at 135F or above.
COS: CFSM reheated TCS foods to 165 and ensured all hot holding equipment was turned on for proper hot holding at 135 or hotter.

Performed informal follow-up on 02/24/25 on drink nozzles at waitress station. Drink nozzles were still soiled. discussed replacing current nozzles with new ones. Employee assigned to replace.

Wet stacking of containers was not present at time of follow-up. PIC mentioned they are doing a better job of stacking to air-dry dishes.

Observed dust accumulation on walk-in cooler fan covers and the ceiling and lights. Corrective action: employee assigned to clean. Will perform informal follow-up on 03/04/2025. Performed informal follow-up on 03/05/25. Walk-in cooler fan covers and light fixtures still soiled with dust accumulation and black spots. Will return on 03/10 to recheck. Performed recheck on 03/10. WIC fan covers and light fixtures were clean.

Observed improper cooling methods used to cool TCS food items. Cooked corn in walk-in cooler actively cooling in tightly lidded containers stacked ontop of one another preventing rapid cooling. Corrective Action: CFSM was notified, food items were loosely covered and unstacked. Discussed cooling methods.

Observed soups (tomato basil 110 degrees, parm cheese 81 degrees, broccoli and cheese 111 degrees) below 135 degrees at steam table. Per discussion with PIC food items were within time parameters. Steam table hadn't been turned on contributing to the temperatures. Corrective Action: PIC was notified, employee reheated soups to a minimum temperature of 165 degrees.

Observed sanitizer buckets stored in handwashing sink at bar area. Corrective Action: PIC was notified, sanitizer buckets were removed from handwashing sink. Discussed handwashing sink always being readily available for handwashing only.

Observed multiple tcs food items (cooked pasta, cooked chicken, cooked rice)stored past discard date of 9/10 and inspection performed on 9/11. Corrective Action: PIC was notified, food items were discarded. Educated on FIFO.
