Corrective action (CA): All TCS food shall be 41°F or below for cold holding. Corrective on-site (COS) all the concerned foods were discarded except the food received on the day of the inspection. All prep foods were moved to another cooler (Make table #2) and the person in charge was informed that the prep foods shall be kept for no longer than 4 hours until all equipment is repaired.
