Observed food items _ corn, cheese, yogurt, garlic, not held at 41°F or below for cold holding in the walk-in cooler. Corrective action (CA): time/temperature control for safety shall be 41°F or below for cold holding. Corrected on-site: all concerned foods were discarded. The received foods on the day of the inspection were moved to other coolers.
Observed walk-in cooler unable to maintain foods at 41°F or below. The walk-in cooler is not in good repair and must be serviced.
