Observed several TCS food items in the reach-in cooler without date marking. Corrective action (CA) time/temperature control for safety (TCS) foods shall be marked with the prep date, especially with the discard date. 7-day max for cold ready-to-eat food (RTE) if held for more than 24 hours. The person in charge was informed to always date mark TCS and RTE foods with the discard date.
