Observed black/brown stain in white surface inside the ice machine- mold-like substance. Corrective action: Ensure all food contact surfaces are cleaned and sanitized frequently to prevent mold-like substances or accumulation. The ice machine must be cleaned and sanitized by 04/18/2026
6-2 - proper date marking and disposition
Observed cheese, lettuce, and coleslaw stored in both the reach-in cooler at the main kitchen and the back, not properly date-marked CA: All ready-to-eat (RTE) and time/ temperature control for safety foods shall be dated market with the discard date when held more than 24 hours. COS All concerned foods were identified to be discarded by the person in charges
