Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed pink/black mold-like on the inner surface and drip plate of the ice machine. Corrective action (CA): All food contact surfaces shall be clean and sanitized frequently to prevent stain, mold-like substance buildup, or accumulation. The ice machine shall be cleaned by 10/02/2025
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed amber containers/trays stacked wet on clean shelves located in the main line area. Ensure they are fully air-dried before stacking them vertically.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed ice buildup in the reach-in freezer and walk-in cooler (Heavy), and leak condensation in the reach-in cooler in the main line area. All these units shall be serviced.

Reach-in cooler shall be serviced and cannot be used to hold TCS or RTE foods since the ambient is 43°F

The gasket around the reach-in cooler shall be cleaned due to heavy buildup of stains and residues.
