Observed the exterior surface of the ice machine under the metal rack with an accumulation of dust. Ensure all surfaces are free from dust or accumulation.

Observed Tuna salad cups stored in the bottom part of the cold drawer not held at 41°F as required. Corrective action (CA) time/temperature control for safety (TCS foods shall be maintained at 41°F or below for cold holding). COS: All concerned foods were discarded.

The cold drawer cooler shall be serviced since it cannot maintain food at 41°F or below. It may be due to the fact that the door is not in good repair. Ensure the door and cooler are serviced. Do not store any TCS food in the Unit until it is serviced. contact the health authority for a follow-up equipment check and email the report to the provided email.
