12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed the sanitizer bucket (with a wet cloth) with low sanitizer concentration, and the working wet cloth was not stored in the wiping cloth bucket stored on the prep-table. Correct action: Ensure that working clothes are stored in the wiping cloth bucket (submerged) with a proper concentration level of between 150 ppm and 400 ppm. Cos: Sanitizer was replaced.
14A - in-use utensils: properly stored

Single-service scoops were stored in food at multiple areas. Ensure only food-grade equipment and utensils are used. Cos: Scoops were removed.
14B - utensils, equipment and linens: properly stored, dried, handled

A clear bucket was stored under the prep table in front of the walking cooler, wet stacking. Ensure that equipment utensils are fully air-dried before stacking them vertically.

A heavy buildup of ice in the walking freezer and on the door, which makes it impossible to close the door.
15C - nonfood-contact surfaces clean

The oven must be cleaned and sanitized due to buildup.
