Permit suspended due to three consecutive violations of 14B .05(10)(e) 1,2,4 (wet stacking). Permit was reinstated during inspection after onsite training. Note: Discussed proper cold holding/cooling methods with person in charge. Pico de gallo should not be kept in double stacked plastic containers in order to maintain proper cold holding temperatures. Containers of cheese slices in prep cooler should not be overfilled in order to maintain proper cold holding temperatures. Note: All employees with facial hair 1/2 inch or longer must wear a beard net. Note: If employee beverages are in kitchen, they must be in a single use cup with a lid and straw away from food prep areas.
