6-1A: .04(6)(f)Multiple time/ temperature control for safety (TCS) foods in make line prep cooler and salad prep cooler (see temperature log) observed above 41F. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: All foods placed on make line/ in salad prep cooler within last hour. All items placed in ice bath to cool back down. Facility plans to utilize ice baths until make line cooler is repaired. Salads will be kept in walk-in.
