The walls must be repaired with light-colored fiberglass reinforced panels, stainless steel, or light-colored ceramic tile. The manager stated that all foods are served well; however, a reminder statement is present on the menu. The manager was advised to present the correct menus. 5-1B: .04(5)(i)Beef vegetable soup, chili, and cheese were observed reheating since 11:30 a.m. At 1:30 p.m., the beef vegetable soup measured 128°F, the chili measured 96°F, and the cheese measured 129°F. None of the items reached the required reheating temperature of 165°F within two hours. Time/temperature control for safety food that is cooked, cooled, and reheated for hot holding shall be reheated so that all parts of the food reach a minimum temperature of 165°F (74°C) for 15 seconds within 2 hours. (P) Corrective Actions: The foods were discarded.

Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. (C)
