Observed improper vertical separation of raw animal foods and ready-to-eat foods. Raw shelled eggs above cooked steak in RIC. Observed improper horizontal separation of raw animal foods and ready-to-eat foods. Raw steak next to RTE jalapenos in a jar in 2-Door RIC. Raw animal foods shall be stored in a manner that prevents cross contamination from RTE foods. Corrective Actions: PIC rearranged TCS foods to prevent cross contamination.

Observed open dumpster lid. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered: With tight-fitting lids or doors if kept outside the food service establishment. Corrective Actions: PIC closed dumpster lid.
