Observed raw fish stored below raw steak and raw chicken. Observed raw pork food products stored in between bottled beverages and raw chicken, as well as directly stored on top of a box of broccoli. Manager was given a food storage chart. Manager corrected on site.

Observed no date marking for prepped raw chicken, steak, and fish.
12A - contamination prevented during food preparation, storage, display

Observed an open pan of breading flour stored uncovered and directly next to an open garbage can. Manager covered the breading flour and relocated the garbage can.
12C - wiping cloths: properly used and stored

Observed wet wiping cloths stored on prep table and cutting board of the prep top cooler.

Observed dust accumulation above the food prep line.

Regulation: 511-6-1.07(5)(d) - cleaning ventilation system, nuisance & discharge prohibition, cleaned in way not to cause contamination or create a public health hazard (c)
Observed dust accumulation on the air vents throughout the kitchen and unisex restroom.
