Observed raw egg batter for french toast stored above cooked chicken wings, and sliced tomatoes and pickles stored directly next to raw whiting in the reach in cooler. Observed deli ham and precooked rope sausage stored with raw sausage patties in the walk in cooler. Manager corrected on site by properly storing raw food items under RTE food and according to the cooking temperature.

Observed biscuits stored uncovered underneath prep table on the cookline. The cook covered the biscuits with a lid. Observed a bag of black beans and garbanzo beans stored opened and exposed in their original packaging. Manager was advised to place beans inside of an approved food container with lid covers.
4-2B - food-contact surfaces: cleaned & sanitized

Observed clean utensils stored inside of a container with excessive food debris. Manager was advised to clean the food debris out of the container and rewash the utensils.

Observed dust build up on the walk in cooler shelf underneath the cooling fans. Observed microwave with excessive rust and paint peeling on the interior surface. Manager was advised to replace the microwave. Observed grease and food accumulation underneath the grill area.
17D - adequate ventilation and lighting; designated areas used

Observed no lighting in chemical and food storage area towards the back door of the establishment that leads to the dumpster area. Manager was advised to put up a light for clear visibility.
