6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed a large container of premade waffle batter, a container of cooled sausage patties and cooled egg omelets without date marking. Food that has been removed from its original packaging or made and placed in a container that will be held in the facility for over 24hrs needs to be date marked. Person in charge (PIC) states that the regular food attendant did not come in today but will call and find out when the items were made and date mark them.
