Observed a plate of cooked pork belly (39F) and shrimp tempura (40F) stored on the floor under the storage rack for dry storage. PIC asked the chef about the food items and was told the food was for employees. Food may not be stored under other sources of contamination. Food was removed and discarded.

Observed sushi rice (95F) being held on time as public health control not marked indicating the start or ending time. Per the sushi chef, the rice is leftover from yesterday. If time without temperature control is used as the public health control up to a maximum of 4 hours: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Rice discarded.
