Observed Au Ju Sauce (128F) inside the steam well below 135F. Noticed the food item is double pan with the water temperature inside the stainless steel container of 133F. All hot-hold Time/Temperature Control for Safety (TCS) foods must be 135F or above. Corrected on Site (COS): Au Ju Sauce discarded.
17B - garbage/refuse properly disposed; facilities maintained

Observed garbage debris on the ground around the dumpster area and around the outside area of the dumpster. Garbage must be stored inside the dumpster and not on the ground. Clean the area around the dumpster.
