Observed high temperature dish machine water not reaching required temperature of 160F at plate level. Corrective Action (CA): Person in Charge (PIC) instructed to ensure dish machine final rinse reached minimum 160F at plate level to ensure plates and utensils are properly sanitized. PIC instructed to call technical to fix unit and to use three compartment sink for proper sanitizing until unit is verified to operator at the proper temperature. REPEAT.

Observed mold growth/debris build up on interior of ice machine. CA: PIC instructed to ensure ice machine is cleaned regularly to prevent mold growth/debris build up. REPEAT.
