Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed a chlorine concentration of 0 ppm in chemical dishmachine next to three-compartment sink. Corrective Action (CA): Person-in charge (PIC) advised to ensure chlorine concentration in dishmachine is maintained between 50-100 ppm. PIC adjusted sanitizer container and tubing. Dishmachine maintaining 50-100 ppm.

Observed dish machine currently incapable of dispensing sanitizer and detergent and three compartment sink drains for rinse and sanitize compartment not holding water

Observed expired chlorine test strips.
